Mushroom Broccoli Soup

Ingredients
  • 200 gm mushroom sliced
  • 250 gm broccoli chopped
  • 2 whole garlic gloves
  • 2 cups vegetable stock
  • 2 tbsp vegetable oil
  • 1 medium onion sliced
  • 1/3 cup cooking cream
  • 1/4 tbsp black pepper seeds
  • salt
Instructions
  1. On a pot, over medium heat, add two teaspoons of vegetable oil then add the sliced onion, black pepper seeds and garlic gloves. Saute for 2 minutes.

  2. Add the mushrooms and broccoli. Stir for 2 extra minutes then add the vegetable stock. Simmer for 10-15 minutes until broccoli is tender then remove from heat.

  3. Blend the vegetables until smooth, add the cream and put back on heat for extra 2-3 minutes, add salt to taste and serve.
