Super moist date cake

Ingredients

  • 3 Eggs
  • 1 cup Pitted dates chopped
  • 1 cup Oats powdered
  • 1 cup All-purpose flour
  • 1 cup Boiling water
  • 3/4 cup Sugar
  • 1/2 tbsp Vegetable oil
  • 1 teaspoon Vinegar
  • 1 teaspoon Vanilla extract =1/4 teaspoons vanilla
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt

Instructions

  1. Preheat oven to 180°C. Line the bottom of a 13 x 9 inch (30 x 20 cm) pan with parchment paper. Grease or spray with nonstick cooking spray. Set aside.

  2. Place dates into a bowl and pour boiling water over the dates. Set the bowl aside to cool for 5 minutes.

  3. In a large mixing bowl, use an electric mixer to mix together 3 eggs, vanilla extract and vinegar until light and fluffy.

  4. In an electric blender, blend the chopped dates with the previously added boiling water, vegetable oil and sugar until dates are completely blended.

    Then, pour this mixture to the eggs. Mix well for an extra minute.

  5. In a medium bowl, whisk together the flour, ground oats, baking powder, and salt

  6. Gradually add the dry ingredients to the wet ingredients in the large mixing bowl.

  7. Pour batter into prepared pan and spread evenly.

    Bake in preheated oven for 25-30 minutes. let it Completely cool then serve.

Recipe Notes

1- To know if your cake is done, Insert a toothpick into the center of the cake. If it comes out clean with nothing sticking, the cake is done. That applies to all kinds of cake.

2- While adding the date-water-oil-sugar mixture to the eggs, and if the water is still a bit hot, avoid adding it directly to the center of the mixing bowl as you don't want your eggs to be immediately cooked. Instead, you can pour it along the internal side of the mixing bowl.
