To prepare the stuffing; In a pot over medium heat, add 1 tbsp of vegetable oil. Once shimmered, add one cup of green peas and 1 cup of carrot cubes. lower the heat, cover the pot and let cook for 10 minutes, stir occasionally. Add 1 cup of mashed potatoes, milk, butter and thyme. Remove from the heat. Season with salt and pepper to taste.
In a large bowl, mix the ground beef, bread crumbs, chopped onion, 2 tbsp vegetable oil, ginger, cinnamon, 1 teaspoon of salt and 1 teaspoon of pepper.
Shape the beef mixture into cup shapes and stuff it with the peas, carrots and mashed potatoes.
Preheat the oven to 220 C degrees. Line a pan with a parchment paper. grease with oil or spray some non stick oil. Place the kofta cups in the pan and bake for 20 -25 minutes. Serve
