Cheddar Cheese Sauce

Ingredients
  • 1 cup milk
  • 1 tbsp butter
  • 1/2 cup cheddar cheese grated
  • 1/2 tbsp flour
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon chili powder
  • salt
Instructions
  1. In a pot, over low heat, add the butter and flour, stir until the flour is light gold then gradually add the milk while whisking until forming a smooth mixture. 

  2. Bring to a boil over low heat, stirring constantly until slightly thickened.

  3. Remove from heat. Stir in the cheese, mustard, chili powder (optional) and salt to taste, stirring until cheese melts. Serve.

Recipe Notes

Remove from heat, then stir in the cheese to ensure that the sauce doesn't curdle. If it's boiled after the cheese is added, the sauce will separate or curdle.
