Are you in a hurry? This hearty soup takes only 20 Minutes to be done and tastes like heaven in a bowl. Just add some fresh parsley leaves and enjoy the perfect meal.
- 250 gm Beef ground
- 150 gm Orzo pasta
- 30 gm Tomato paste = 2 tbsp
- 4 cups Beef broth
- 1-2 cups Water
- 1 cup Fresh parsley leaves not chopped
- 4 tbsp Vegetable oil divided
- 1 Small onion diced
- Salt
- Pepper

Pour 2 tbsp of vegetable oil in a medium-sized non-stick frying pan. Heat the pan on medium heat until the oil warms up a bit then add 1 small diced onion.
Saute the onion until it's translucent and add the ground beef. Stir until cooked which usually takes 3-5 minutes. Add salt and pepper to taste and let it cool.

Pour 2 tbsp. of vegetable oil in a pot. Heat the pot on medium heat and add orzo pasta.
Stir the orzo pasta into the oil and saute until lightly browned. This will take 2-4 minutes, depending on the heat. Then, Pour in 4 cups of beef broth and turn up the heat to high and bring the mixture to a boil.

Add 2 tbsp. of tomato paste plus the previously cooked ground beef. Reduce the heat to low and simmer the pasta and broth mixture for 10 minutes, or until the pasta is tender.

Stir in fresh parsley leaves just before serving, as extended exposure to heat can dull their flavor.
1- While sauteing orzo pasta, If it starts getting too dark too fast, take it off the stove and let cool before returning it on the stove to finish the recipe. You want it to be beautifully toasted not burnt.
2- Sometimes you will find the pasta has absorbed most of the broth, but is still a bit tough. In that case, just add 1-2 cups of water to the pot and keep cooking.
