Arugula, radish and pomegranate salad

Ingredients
  • 3 cups lightly packed arugula
  • 2 cups pomegranate seeds
  • 1 cup walnuts Toasted
  • 1 cup radish sliced
  • 1/2 cup Parmesan cheese shavings
  • 1/4 cup pomegranate molasses
  • 1/4 cup olive oil
  • 2 tbsp honey
  • 3 tbsp vinegar
  • salt
Instructions
  1. To make the dressing, combine molasses, honey and vinegar in a mixing bowl and whisk to combine. Slowly drizzle in olive oil while you whisk. Season with salt to taste.

  2. Toss salad ingredients together and add the dressing.
